To the juice of our Shiraz grapes red cayenne chillies are added and the juice is reduced. High cocoa chocolate is added to give an unforgettable tasting experience: a chocolate ‘hit’ that lasts for 3-4 seconds before the chilli presents it’s credentials.
While pan frying chicken breasts, add slices of prosciutto to the oven until crisp. Remove the breasts onto the serving plates, cover with prosciutto and several thin slices of avocado. Add 60ml of the Vincotto to the hot pan and deglaze, pouring the combined sauce over the chicken and decorating the plate. Delicious also over ice cream!
