Gai’s latest creation is a Raspberry Vinaigrette, with the raspberry flavour coming principally from our vine-row Shiraz grapes, blended with raspberry vinegar & extra virgin olive oil. Priced at $23 (250ml), here is one (of numerous) suggestions for its use:
Finely slice English spinach, add picked watercress (or baby rocket) and finely diced Spanish onion. Drizzle the Vinaigrette over and toss the salad. Then when ready to serve, sprinkle with toasted pine nuts (or toasted sesame seeds). The result will be a salad wonder – to accompany poached chicken or pan fried duck breast.
