Our 2015 olives were harvested in May and processed within the hour to maximise the freshness of the oil. With good quality fruit and careful processing, the resultant cold pressed, extra virgin olive oils (EVOO) should be “green and grassy” in flavour. This flavour gives you confidence that the oils are fresh with the myriad of health benefits you can expect from EVOO.
Once pressed, the Extra Virgin Oil is stored in stainless steel tanks. After several months, any impurities in the oil will settle to the bottom of the tanks, conveniently overcoming the need to filter the oil before bottling.
